I will be direct: Domaine du Bouchot is one of the most important discoveries I have made in recent years, and I say that having tasted through a great many Pouilly-Fumé estates. There is something happening here that is rare, a young vigneron who has returned to his native land not merely to maintain a family estate, but to completely rethink what it can be.

Antoine Gouffier arrived at Domaine du Bouchot in 2018, and the Loire Valley has not looked back since.

The Story Behind the Estate

The domaine itself has roots going back to 1966, situated in the southwestern part of Saint-Andelain, one of the most prized communes within the Pouilly-Fumé appellation. Just over ten hectares of Sauvignon Blanc vines occupy this gently rolling terrain, planted in the region's characteristic soils: primarily limestone, gravel, and those pale, chalky terres blanches, the white soils that give the estate's flagship cuvée its name.

What Antoine has done since taking the reins is remarkable, particularly when you consider the broader context. Pouilly-Fumé, for all its prestige, had become something of a comfortable appellation, too many producers leaning on the name rather than the terroir, producing technically correct but fundamentally uninspiring wines. Antoine refused this trajectory. He converted the estate to organic agriculture as early as 2009, the very first domaine in the appellation to do so, and then went further, achieving full Demeter-certified biodynamic status in 2020.

What this means in practice is farming that treats the vine not as a production unit, but as a living organism within a larger ecosystem. No herbicides, no synthetic treatments. Instead, biodynamic preparations, cover crops, and a deep attention to the rhythms of the lunar calendar. The vineyard is managed, as Antoine himself puts it, with a real reflection on the soil-vine-exposure balance, an approach he describes as being inspired by the precision of Burgundy, applied to the terroir of Pouilly-Fumé.

The Wines: Precision Born of Restraint

In the cellar, Antoine's philosophy is one of minimal intervention. Fermentation is triggered naturally by indigenous yeasts, the wild yeasts that live on the grape skins and in the air of the cellar, without the addition of sulphur until bottling. Ageing takes place in a combination of concrete eggs (which preserve freshness while allowing micro-oxygenation) and demi-muids sourced from Burgundy friends who are themselves working biodynamically.

What strikes me most tasting these wines is the extraordinary clarity they possess. There is no noise, no technological interference masking the signal. What you taste in the glass is the direct expression of those terres blanches soils, an almost chalky, mineral texture that builds slowly on the palate, underpinned by the Sauvignon Blanc's natural citrus energy.

Antoine is also, it bears mentioning, the only producer in the Pouilly-Fumé appellation to work with macerations, and some of his cuvées undergo full vinification in barrel. This willingness to push the envelope, while remaining anchored in respect for the terroir, is part of what makes Domaine du Bouchot so compelling.

The Offer: Terres Blanches 2023 & 2022

Terres Blanches 2023: The more recent vintage shows the vivid, fresh character you expect from a young Pouilly-Fumé: citrus blossom, white nectarine, a whisper of grapefruit zest on the nose. On the palate, the wine has a lovely tension, that push-pull between fruit generosity and mineral austerity that defines great central Loire whites. The finish is long and saline. This is a wine to open now but that will reward another two to four years in the cellar.

Terres Blanches 2022: The 2022 vintage across the Loire was one of the finest in recent memory: a warm, dry summer that produced remarkable concentration without sacrificing freshness. This vintage has already started to integrate beautifully, showing more textural complexity and depth than the 2023, with stone fruit notes, white peach, ripe apricot, alongside that characteristic chalk and flint minerality. There is a lovely roundness to the 2022 that makes it exceptionally food-friendly today.

My recommendation: if you want to taste both vintages side by side, order a mixed case. It is one of the most instructive and pleasurable exercises you can undertake as a wine lover experiencing the same terroir through two consecutive growing seasons.

The wine's acidity cuts through richness; its minerality amplifies the savouriness of the dish. It is also brilliant simply on its own, well-chilled, as an aperitif.
