This month's spotlight heads to the Loire Valley, home to some of France's most precise, mineral driven Sauvignon Blanc. Two estates are on offer: Domaine du Bouchot in Pouilly-Fumé and Domaine Thomas et Fils in Sancerre.
Domaine du Bouchot (Pouilly-Fumé)
In business since 1966 and purchased by Antoine Gouffier in 2018, Domaine du Bouchot farms certified organic and biodynamic vines in Pouilly-Fumé. Gouffier was named Vigneron of the Year in 2021 by Revue du Vin de France, and it shows in the wines: hand harvested fruit, fermentation with indigenous yeasts, and no added sulphur during vinification.

Terres Blanches comes from 35 to 40 year old vines grown in white clay, limestone, and fossilised oyster shell, a marine soil that gives the wine its textured, chalky edge alongside green fruit and lemon zest.
Domaine Thomas et Fils (Sancerre)
The Thomas family has farmed in Sancerre since 1670. Julien Thomas, the 13th generation to run the estate, converted the 16 hectare domaine to organic and biodynamic practices in 2012 and ferments exclusively with indigenous yeast.

Le Pierrier takes its name from the rocky, fossil rich limestone slopes it comes from, giving a Sancerre with citrus, crisp green apple, and a long, flinty, mineral finish.
